Tasting Notes
Vanilla lovers, don’t hold back! A myriad of aromas await: crème pâtissière on a bed of pears and bananas intertwined with subtle fragrances of pineapple, wax, sponge cake and a beautiful assortment of honeys (acacia comes to mind). It's a pure joy to nose. The first sip is like a masterclass in French pastry: chou, tropézienne tart, salambo, mille-feuille, éclair... vanilla is strong in this one too with flavours of custard, ginger and a pinch of allspice. Poached pears, join the party with fruit jellies in tow, stored in an oak and leather box, a hint of cut grass, all enhanced with spicy citrus notes. Even with water, vanilla refuses to give an inch, this time flanked by candied lemon and butter, honey and grilled pineapple. It's not all warmth and baking though, refreshing accents of eucalyptus, pine and white flowers linger with the ever-present suggestion of pears. Finally, it's pears that steal the show accompanied by notes of citrus, waxed wood and orange zest. Spices also make a comeback on the finish with chilli, ginger and black pepper, and a cooling caress of peppermint balm and eucalyptus.
