Aromas evaded any suggestions of cleanliness and headed straight for the malt kiln to play in charcoal, ash and soot. Haggis and roasted chestnuts joined burnt toffee popcorn and porridge as we approached the palate. Chewing on a mixture of sticky cough syrup, fennel seeds and coal dust our attention turned towards flavours of crispy duck skin, smoked fish and bonfire toasted marshmallows. Reducing with water brought us to a place of burnt heather, crispy bacon and crushed seashells with smoked venison and gravy. Sweet toffee and ginger wine now joined duck fat, roasted pork belly and marmalade while chamomile tea, green herbs and menthol morphed on the finish.
