Tasting Notes
It’s love at first sniff with first vanilla, fresh almonds, toffee and chocolate. Then fruits take the front seat with much pear and quince to start, closely trailed by red fruits (cherries, red currants, wild strawberries…). It’s not all just mellow sweetness though, with leather and black pepper spicing things up. On the palate, there’s a warming balance between demerara and marshmallow sweetness on the one side and the discreet bitterness of chocolate, rancio* and wax on the other. Crumble, banoffee and pie crust the lead us onwards to a pastry shop. The finish on the palate brings back fresher elements from the first nose with liquorice seasoned with just a hint of eucalyptus and jalapeño.
