Tasting Notes
A seductive serenade of marzipan and black cherries lightly coated with seville orange flavoured chocolate danced over dates and cardamom pods in sticky burnt sugar. Deep and complex flavours dived into leaf mulch and nettle tea in an old sherry bodega, in the dark corners of which we discovered gooseberries, gentle ginger and jerusalem artichokes. A dash of water delivered a wave of marmalade and apricot jam with sweet cherries and a dusting of demerara sugar and coal dust. A bramble jam fruitiness continued on the palate alongside fresh plums before cocoa powder and soot settled onto sweet kippers on the finish.
Matured for 21 years in a bourbon hogshead before transfer to a first fill ex-oloroso hogshead.
