Reduction brought out engine oil, smoked fennel, malt vinegar crisps and fresh citrus fruits charred with a blowtorch. Bonkers but hugely entertaining. In the mouth we found light, clean medicines along with aniseed, paprika, iodine, floor cleaner and chemical-tinged peat. With water it evolved carbolic acidity, smoky bacon notes, herbal mouthwash, bubblegum, lemon juice and hessian.
