Tasting Notes
After eight years in ex-bourbon wood we moved this into a refill Trinidad Rum barrel. On the nose, sweet notes (chocolate rum truffles, rum and raisin ice-cream) vied with coconut, peppercorns, pine nuts and wood shavings, lemon and rhubarb. The palate was interesting and different; intense sweetness (rum baba, rum and raisin chocolate, foamy bananas) followed by grapefruit and coffee beans. The reduced nose was much sweeter – hot chocolate with whipped cream, crème anglaise, meringues, black cherries and sprinkles on ice-cream. The palate now experienced cane sugar syrup, carob and chocolate stout, then a dry finish of cinnamon, ginger, wasabi and spiced rum.
