Tasting Notes
On the nose there is a salty sea breeze, miso soup and pine resin, with glazed spare ribs from the smoker and preserved lemons. With a little time, sweet aromas of mirabelle plum, cotton candy and vanilla pudding emerge. The interplay of aromas continues on the palate: bacon beans and olive oil on fresh crusty bread, white pepper, mint and star anise as well as fermented fruits and crème brûlée. Water opens the whiskey without dramatically changing its character. Fruity and smoky notes are now even more present: sugared peaches, caramelized almonds, ash and leather. The finish is dry, sweet and with a slightly peppery spiciness.
