The nose offered custard Danish, honey, vanilla, rum punch, pineapple, mango and humidors (cigar boxes, aromatic smoke and leather armchairs). The palate pulsed with kick-boxer power – the rum is now a hammer punch, followed by jabs of liquorice and ginger, uppercuts of tobacco leaf, coconut and melon skins and a flying kick of trainer shoe to the head. Water turned the nose more tropical and floral; jasmine, cherry blossom, lemon puffs and inflatable boats. The reduced palate turned into an after-contest hug – golden sultanas, waxy fruits, garibaldis and monoi oil. After four years embraced by ex-bourbon wood, we transferred this into a Panamanian rum barrel.
