Tasting Notes
Icing sugar was dusted on to a damp marble slab, joining mango chunks, plantain and lemon segments. This was tropical and sweet to the nose. The palate was likewise, full of rum punch spiked with banana schnapps and wild strawberries. We paused for garbanzo beans and white bread. Water offered toffee and oak notes, vanilla sponge and wax crayons to the nose; less marble, more marzipan. The palate was now lighter in body, but fully retained its sweet character, with a wave of chilli and mace spice to finish. After 12 years in an ex-bourbon barrel, we transferred this to a second fill Trinidad rum barrel for the remainder of its maturation.
