Tasting Notes
At first we encountered heathery, billowing peat smoke. Complimented by notes of crisp white linens, chalky beach pebbles, sheep wool and oily lemon rind. Water unearthed candle wax, hessian cloth, seashore freshness and a briny, Atlantic ozone vibe. In the mouth we got an initial saltiness of frying bacon rinds, then lemon cough medicines, herbal teas and soft, quilted peat smoke. Reduction brought out mineral oils, camphor, peat soots, bouillon and smoked olive oil. Classical and typically brilliant stuff from Orkney. At 6 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
