Tasting Notes
A lovey initial aroma that suggested a kind of 'candied' smokiness, alongside beach wood and fresher tones like foaming limpets and barnacles in a rock pool. We also noted elderflower, seaweed, clay and coastal wildflowers. Water brought some sharper notes of plum eau de vie, canvass, crisp peat smoke and citrus peels. The neat palate opened with lovely flavours of smoked olive oil, mineral salts, turmeric, dried herbs and cough mixtures. Charismatic and classical in style. Water brought out more Orcadian, herbal peat smoke, along with some cured meats, dried seaweed and umami paste. Superb! At 9 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
