Tasting Notes
Having smothered hot buttered toast with set honey, apple segments and cherry blossom, we presented this sweet breakfast oddity on a slab of rubber. To the palate, grape must burst forward, as did fig, wintergreen, mint and salad rocket. The more we let it linger, the better it got. Water did likewise to the aroma and palate, with honey, woodspice and lemon sherbets, while retaining the green vegetal notes. A delicious curiosity. After 11 years in an ex-bourbon hogshead, we transferred this to a first fill Spanish oak oloroso hogshead for the remainder of its maturation.
