Tasting Notes
The initial nose suggested to us chocolate sponge cake, nutmeg, coffee grounds and the earthy tang of an old potting shed. Beyond that we noted balsamic reduction, fig and brooding dark ales. Water revealed a deeper, more herbal side with dried sage and marjoram. Then cocoa, fragrant hardwoods and chopped hazelnut. The palate was sweet and richly spicy at first. Oak shavings, bitter chocolate, boozy cherries and whisky toffee. With water the texture became thicker and creamier, notes of red apple appeared along with coconut, stewed prunes, dark rum and walnuts. Matured for 10 years in a bourbon hogshead before transfer to a 2nd fill charred red wine barrique.
