Another typically excellent example of this great distillery. We found immediate notes of applewood smoke, charred pears, ginger wine and first aid kit ointment. With time it evolved some beautifully pure notes of seawater, pink grapefruit and Germoline. Reduction brought out smoke-infused hessian, Poire Williams, smoked rapeseed oil and rollmop herring in vinegar with a few drops of iodine. With water we got a more delicate profile with pink sea salt, gorse bush, tarred beach wood and salty ceviche with lime juice.
