Sweet and fragrant smoke engulfed lavender and heather within sight of the sea as oily mackerel, anchovies and shellfish were joined by roasted chestnuts and praline. The palate was a "delightfully grubby" affair that forged a path of soot and tar through fish boxes, haggis and antiseptic lotions. Toasted pine nuts and heather honey emerged for periods before sinking back into burning jam and wood ash. Water brought us industrial chimney stacks packed with smouldering damp leaves and liquorice. Charred wood now sat beside molasses, coffee and black tea. Soot and ash remained dominant on the palate but now with light brine, burnt fruit loaf and dark treacle on car tyres.
