The nose opened with Neapolitan ice-cream, marshmallows and vanilla custard, but a citric surge gradually caught up (lemon pulp, lime leaf, lemon barley water). The palate’s sweet treats were tempered by teasing bitterness – lemon drizzle cake, sugared almonds and burnt toffee; the finish picked up tobacco leaf, tree bark and cinnamon. The reduced nose caught a moment by the pool with sauvignon blanc and lemon-flavoured dark chocolate served on sun-warmed oak. The palate now wandered from a bright dawn of honey, carnation milk and lemon cup cakes to a dry dusk of chilli, cumin, lemon zest and mint flavoured Fisherman’s Friends.A fresh coastal breeze and oyster shells joined driftwood, samphire, and trout with a side order of peaches and buttered new potatoes dusted with cumin. The palate graced us with the soft tannins of peach skins plus pickled ginger, sultanas, and charred lemon while the sweetness of dessert wine, mint sweets and brown sugar combined with gentle spices. With water came honeysuckle and lemon posset alongside meringue, grape skins, and the minty freshness of mojito cocktails. Now tropical fruit salad, cereal bars and lemon juice on crepes shifted towards toasted marshmallows, eucalyptus, and the Riesling-like oiliness of clean petrol.
