Tasting Notes
We all immediately noted variations on exotic and green fruits, which seems typical for this distillery in this era. There was lots of pineapple, juicy fruits, papaya, mango and banana. Water made it brighter, sharper, greener and a little more citric and zingy, with a touch of elegant waxiness. The palate showed similar fruit characteristics to the nose, but with a spicier backbone, some oiliness and the sharpness of gooseberry and star fruit. Reduction brought a lovely waxy and oily texture, along with fruit salad juices, camphor, herbal teas and the tart zing of a whisky sour.
