Tasting Notes
This one got us all going with treacle toffee, chocolate orange, toffee apples, fig rolls, stewed rhubarb, fudge, doughnuts, cinnamon swirls – the list could go on and on. The palate was equally evocative, with flavours of spicy dark chocolate, stem ginger, brazil nuts, thyme, cinnamon and orange sponge cake while in the background, always noticeable, a sweet exotic wood spice. After reduction we agreed on a chocolate mousse sprinkled with pistachios and plenty of whipped cream. To taste, sweet dark glacé cherries, tonka beans and pears poached in a well-oaked new world shiraz. Following 10 years in an ex-bourbon hogshead, we transferred this whisky into a first fill PX hogshead.
