Tasting Notes

The bright lusciousness of pear drops, peach schnapps, rhubarb and custard, heather flowers and dried lavender kicked everything off. Then finger limes, crisp green apples and aniseed. Rich, complex and the epitome of aromatic maturity. A little careful reduction offered us marshmallows gentle toasting over coals. Toasted coconut, monstera fruit, popping candy, banana split and overripe mango. The mouth revealed a gorgeously textural profile. Bursting white fruit notes of lychee in syrup, poached pears, peaches lurking in fruit salad juices, brown sugar and a lick of aniseed. With water we found a thicker vanilla accent emerging. Also freeze-dried strawberries, delicate floral qualities of rosewater and lavender, then dried mint, creme anglaise and yellow plums in custard. Single malt from selected hogsheads, married in a barrel since 2018.
