Coastal cocktails

Emerging from the melee of the gift shop, its shelves of crisp hardback books still filling our nostrils, we found calm in aloe balm before sauntering across the machair. We tasted chewy, coastal clam broth, splashed with bitter lemon and topped with a coriander seed, mango and chipotle salsa. Water gave the nose smoked cod roe, with soot, an orange mustard dressing and chocolate-lime ice cream. The palate was similarly coastal but fruity too: delivering the salt-and-lime rim of a cocktail glass, alongside watermelon with tahini dressing, clams and coconut.
