Tasting Notes
The neat nose revealed leafy, earthy and leathery old-school sherry notes. We found lots of prunes in armagnac, mint tea, dark chocolate studded with sea salt, and plum wine. A splash of water delivered soft dark fruits, lots of sultana, camphor, aged mead and herbal bitters with a scoop of spiced orange marmalade. The palate opened with milk chocolate and caramel wafers, then marshmallow melting in a hot chocolate, pipe tobacco, strawberry wine and red liquorice. Water enhanced the sweetness even further, bringing treacle, walnut wine, assorted honeys, chocolate ganache and petrichor earthiness. This was matured in an ex-bourbon hogshead for 11 years before being transferred to a first fill Spanish oak oloroso hogshead.
