Tasting Notes
We found a beautifully lush and inviting nose full of ripe green fruits, watermelon sweets, geraniums in a warm greenhouse and a thick waft of tomato vines. It evolved from here with rich notes of buttered oatcakes, crushed nettles and wild meadow flowers. Reduction gave us olive oil, fresh breads, hessian cloth and lemon cough drops. The neat palate was thick in texture with vivid notes of spiced honey cake, white flowers weighted with pollens, old style Irish whiskey, shoe polish and boiled lime sweets. Water brought out a sweet waxiness, eucalyptus tea, cinnamon bark and herb-infused olive oil.
