Tasting Notes
Baked raisins, sweet caramel, cinder toffee, a fudge bar and lingering spices next to cedar wood awaited us on the nose neat. Massive spice on the palate, feisty and fierce like old Jamaican extra fiery ginger beer - this certainly turned up the fire! Water and time reminded us of brown sugar on slightly burned pancakes as well as baked churro chips with a spicy chocolate ganache dip. To taste, plenty of esters and a wonderful natural sweetness came to the fore, as we drank a ‘Sex on the beach’ cocktail. Following eight years in an ex-bourbon barrel, we transferred this whisky into a second fill Oloroso hogshead that previously matured whisky from distillery 44.
