Among seashells and salty sea air we toasted marshmallows and digestive biscuits as tarry ropes and lobster nets washed up on the beach. Fruitier notes of strawberry and blackcurrant joined chimney soot while on the palate came herbal flavours with marmalade, smoky bacon and lavender. With water we found lemon meringue pie in a coal bucket with fennel seeds, marzipan and hot smoked salmon. Fruity flavours of apple and grapefruit lifted pork sausages and wood char before Turkish delight and bitter chocolate joined pipe tobacco on the long finish. In 2017 we combined selected hogsheads before returning the single malt to a variety of different casks to develop further. This is one of those casks.
