Tasting Notes
Smoked crab cakes, pan-seared scallops with lemon butter, monkfish wrapped in pancetta served with lemon mayonnaise and green asparagus, warm chorizo and rocket salad: the list could just go on and on...The creamy palate with peat smoke was almost eclipsed by the chunky vanilla sweetness. John Denver’s song, ‘Take Me Home, Country Roads’, came to mind, with the first two words of that song being “almost heaven”. Water added fresh maritime notes of lemon juice on fresh oysters, raw langoustines and mussels. To taste, this was like a warm breeze at night overlooking the Sound of Islay while watching the golden glitter path of the moon.
