Tasting Notes
Initially the aroma was dominated by green olives, linseed oil and a white pepper prickle but that was soon superseded by the fruity scent of peaches and lychee syrup made with pure cane sugar. The taste was of a dreamy summery peach and cream cake with layers of vanilla sponge, brown butter, whipped cream and peaches caramelised with brown sugar and cinnamon. Following reduction more fruit came to the fore, as we pan fried apricots, passion fruit, greengages and apples in butter. On the palate, we enjoyed a delightful punch blending falernum, honey syrup, aged rum and all the fresh tropical fruits you can imagine.
