Tasting Notes
The impressive colour was followed by an intriguing set of aromas, blackcurrant jam, candied fennel seeds, honeyed cashew nuts, black pepper, hints of leather and prune infused shisha tobacco. Zingy and dark on the palate as it seemed to smoulder on the tongue with a sweeter note in the background of sun-dried raisins, maple syrup and Belgian waffles. Water released the scent of sherry poached pears, chocolate eclairs and a French-style apple tart as we enjoyed a yoghurt and blackberry Crème Brûlée with a hazelnut twist. After nine years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill American oak PX Sherry hogshead.
