Tasting Notes

Aromas were rich and sweet with an abundance of toffee, chocolate and coffee dregs mixing with caramel shortbread, condensed milk and charred oak. Instantly the palate was alive with menthol, hints of tea tree oil and forest floors joining ginger, walnuts and poached pears. Adding water elevated the freshness to cool-yet-hot muscle rub alongside gooseberries, pineapple and the green crunchiness of fresh bay leaves. The palate now collided burnt oranges into padron peppers as puffs of incense smoke wafted over seared steak, beef jerky and tobacco in an oak box. After spending 3 years in an ex-bourbon barrel this was transferred to a 2nd fill ex-Islay barrel for the remainder of its maturation.
